Banana Cake

- 3/4 cup butter softened shopping list
- 1 1/2 cups sugar shopping list
- 2 eggs shopping list
- 1 cup Mashed Ripe bananas shopping list
- 2 cups flour, sifted shopping list
- 1 tsp. baking soda shopping list
- 1/2 tsp. salt shopping list
- 1/2 cup buttermilk shopping list
- 1 tsp. vanilla shopping list
- 1/2 cup Chopped pecans shopping list
- 1/2 cup coconut shopping list
How to make it
- In a large mixing bowl, cream butter and sugar until fluffy.
- Add eggs; beat for 2 minutes.
- Add bananas; beat additional 2 minutes.
- Set aside.
- Sift together flour, baking soda, and salt; add creamed mixture alternately with buttermilk and vanilla.
- Beat well; stir in nuts.
- Turn into 2 lightly greased 9" round cake pans.
- Sprinkle half of the coconut on batter.
- Bake at 350 degrees for 25-30 minutes.
- Remove cake from pan and cool.
- Spread creamy nut filling on one layer.
- Place remaining cake layer, with coconut side, on top of filling.
- Frost with creamy white frosting.
