How to make it

  • In a large mixing bowl, cream butter and sugar until fluffy.
  • Add eggs; beat for 2 minutes.
  • Add bananas; beat additional 2 minutes.
  • Set aside.
  • Sift together flour, baking soda, and salt; add creamed mixture alternately with buttermilk and vanilla.
  • Beat well; stir in nuts.
  • Turn into 2 lightly greased 9" round cake pans.
  • Sprinkle half of the coconut on batter.
  • Bake at 350 degrees for 25-30 minutes.
  • Remove cake from pan and cool.
  • Spread creamy nut filling on one layer.
  • Place remaining cake layer, with coconut side, on top of filling.
  • Frost with creamy white frosting.
