This French-Canadian dish has been passed down for many generations. It’s an easy way to get Omega-3’s into your diet without the high price tag of fresh salmon. If you like salmon, you will enjoy this pie.

Ingredients
  • 6 red potatoes, chopped
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 (6 ounce) can salmon, undrained
  • 1 teaspoon dried thyme
  • ½ cup buttermilk
  • 2 (9 inch) unbaked pie shells
  • 1 tsp salt and pepper

Directions
  1. Preheat oven to 400 degrees F.
  2. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes.
  3. In a medium saucepan, cook onions and garlic in olive oil over medium heat until vegetables become transparent in color.
  4. Add onion/garlic mixture, salmon and thyme to cooked potatoes. Mash all together with milk bringing about a mashed potato consistency.
  5. Spread evenly into pie shell.
  6. Place second pie shell over top of salmon mixture and cinch. Prick top shell with a fork.
  7. Bake on lower rack of oven for 45 minutes
