How to make it

  • Preheat oven to 325°.
  • Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, sift together flour, cocoa powder, baking soda and salt.
  • In a large bowl, cream together butter and both sugars until light.
  • Beat in egg, water, vanilla and instant coffee or espresso granules.
  • Gradually add in flour mixture, using the mixer at low speed.
  • Stir in chocolate chips.
  • Drop dough by rounded tablespoons onto baking sheet approximately 2 inches apart.
  • Bake 10-12 minutes, until sides are crispy and centers are no longer shiny. Depending on the size of your cookies, adjust the time.
  • Cool 10 minutes before transfering to wire rack to cool completely.
  • Filling:
  • In a double boiler, melt chocolate and butter.
  • Add vanilla and stir until blended.
  • Cook until it is of spreadable consistency.
  • Spread filling onto coole cookie and top with another cookie.
  • Makes approximately 24 sandwiches.
