Chocoholic Thin Brownie Sandwiches

- Filling: shopping list
- 8 ounces bittersweet chocolate, finely chopped shopping list
- 2-1/2 tablespoons butter, room temperature shopping list
- 3/4 teaspoon vanilla shopping list
- Cookies: shopping list
- 1 cup all purpose flour shopping list
- 3 tablespoon cocoa powder shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup butter, room temperature shopping list
- 2/3 cup brown sugar shopping list
- 1/4 cup sugar shopping list
- 1 large egg shopping list
- 2 teaspoons water shopping list
- 1 teaspoon vanilla shopping list
- 1 teaspoon instant coffee or espresso granules shopping list
- 1-1/2 cups mini chocolate chips shopping list
How to make it
- Preheat oven to 325°.
- Line a baking sheet with parchment paper and set aside.
- In a medium bowl, sift together flour, cocoa powder, baking soda and salt.
- In a large bowl, cream together butter and both sugars until light.
- Beat in egg, water, vanilla and instant coffee or espresso granules.
- Gradually add in flour mixture, using the mixer at low speed.
- Stir in chocolate chips.
- Drop dough by rounded tablespoons onto baking sheet approximately 2 inches apart.
- Bake 10-12 minutes, until sides are crispy and centers are no longer shiny. Depending on the size of your cookies, adjust the time.
- Cool 10 minutes before transfering to wire rack to cool completely.
- Filling:
- In a double boiler, melt chocolate and butter.
- Add vanilla and stir until blended.
- Cook until it is of spreadable consistency.
- Spread filling onto coole cookie and top with another cookie.
- Makes approximately 24 sandwiches.
