I love both scallops and asparagus so when fresh asparagus is in season this combines them both. Hubby loves to surprise me by preparing this one for me.

Ingredients
  • 8 oz chinese thin noodles
  • 1 tablespoon oil
  • 1 pound asparagus cut into 1 inch pieces
  • 1 red pepper cut into thin rings
  • 3 green onions chopped
  • 1 large clove garlic minced
  • 1 pound of scallops halved crosswise
  • 2 tablespoons soy sauce
  • 1teaspoon hot pepper sauce
  • 1teaspoon sesame oil
  • juice of 1/2 of a lime

Directions
  1. Cook noodles in lightly salted water following package directions
  2. heat oil in wok or large skillet over high heat
  3. add aspaprgus, red pepper,onions, and garlic
  4. stir fry for 2 minutes
  5. add scallops stir fry until scallops turn opaque
  6. stir in soy sauce, hot pepper sauce, sesame oil, and lime juice
  7. add drained noodles
  8. heat through stirring occassionally
