How to make it

  • In large skillet, cook onion in olive oil under tender. Add beef broth and bring to a boil. Stir in orzo, meatballs and tomatoes, stir. Return to boil. Cover and reduce heat to medium-low. Simmer 7-8 minutes until liquid is reduced, stirring occasionally. Add plum tomatoes and cook 5-8 minutes until orzo is tender, stirring frequently. Sprinkle with cheese and serve.

    Sounds yummy. I have something similiar with the orzo and love cooking with it instead of using rice. It's been great weather to cook comfort food and I'll be doing it again tonight
