Down South Rice Pudding

- 1 c. uncooked rice shopping list
- 1 c. water shopping list
- 3 -4 c. milk shopping list
- 1 tsp. salt shopping list
- 1/4 cup sugar shopping list
- 2 eggs, beaten ( put in a bowl and set aside) shopping list
- Grated rind of 1/2 a lemon shopping list
- 1/3 c. raisins shopping list
- 1 tsp. vanilla extract shopping list
- Fine dried bread crumbs shopping list
- 1 T. butter shopping list
How to make it
- Heat rice in water
- Add 3 cups of milk, salt and sugar
- Cover and simmer for 40 minutes or until rice is tender
- Add more milk if necessary to keep rice from becoming dry
- Stir frequently during cooking
- Remove from heat
- Add 1/2 cup of cooked rice to the beaten eggs
- Transfer rice/egg combo to the rest of the mixture
- Add lemon rind, raisins and vanilla
- Butter a 1 1/2 quart casserole dish (bottom and sides) and cover bottom and sides with bread crumbs
- Pour rice mixture into casserole
- Dot with butter and sprinkle with crumbs
- Place in a preheated 325 F oven for 30 minutes or until set
- Cool and unmold
- * For a added "sweet treat", serve with strawberries, raspberries or a stewed fruit
