How to make it

  • Beat eggs and mix with milk...whisk together til frothy
  • Combine the flour and 25g of the sugar in a bowl and make a well in the centre...grad add frothy egg mixture,drawing in the flour until a smooth batter is formed...peel and mash 3 of the bananas and stir into the batter until well mixed.
  • Brush the frying pan with oil and add about 4 Tbsp of the batter..Cook for about 1min each side or until golden on both sides...repeat with the remaining mixture, covering the cooked pancakes with foil to keep warm.
  • Slice the remaining bananas then melt the butter in the frying pan.Add the banana slices and sprinkle over the remaining sugar, fry for 3-5mins, turning until golden all over...serve pancakes with banana and butter sauce from pan...sprinklle with sugar,lime juice and zest!

    Oh, these look so good. I will have to make them some morning when I'm feeling pancakey and when my husband is around to help me eat them (he loves pancakes and bananas, so I'm sure he'll be happy to assist). Thank you for sharing this recipe!
