How to make it

  • Cook, peel and dice potatoes, set aside.
  • Combine sugar and cornstarch in a kettle
  • Add the next 6 ingredients and the salt.
  • Cook over low heat, stirring till thick and bubbly.
  • Remove from heat and add onion and mayo
  • Cool
  • Gently combine potatoes, eggs, green pepper and celery.
  • Gently fold in the cooled dressing.
  • Place in covered container.
  • Chill well.
  • Sprinkle with a little paprika before serving.

    Gosh that's real different, never heard of one where you cook part of your dressing. Does it give it a completely different taste? I'll have to bookmark this one and try it.

    The addition of green pepper and celery was my own. I like a little crunch in potato salad :-)
