Wilted Greens Over Pasta Recipe
I admit it. I love pasta in any form. Even more than I like chocolate. This gives me my "green and leafies" as well as pasta.

Ingredients
  • 16 ounces fresh spinach
  • 16 ounces penne pasta, cooked and kept warm
  • 6 slices bacon, diced
  • 1/2 cup onion, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons white wine vinegar
  • 1 teaspoon granulated sugar
  • 2 teaspoons Dijon mustard
  • 1 cup Parmesan cheese, shredded

Directions
  1. Trim spinach and cut into strips.
  2. In Dutch oven, saute bacon over medium heat until crisp.
  3. Remove bacon with slotted spoon and set aside.
  4. Drain off all but 3 tablespoons bacon drippings.
  5. Add onion to Dutch oven. Saute until softened.
  6. Add garlic and red pepper flakes. Saute 1 minute.
  7. Add spinach to Dutch oven and cook until spinach wilts.
  8. Combine hot pasta, vinegar, sugar and mustard.
  9. Add pasta to Dutch oven.
  10. Add cheese. Toss.
  11. Transfer to serving bowl and sprinkle with bacon.

You caught my eye with the "greens" in the title. This will be on our dinner table soon. Tonight maybe if I can get my get-up-and-go and make it to the store for supplies.


Yet another thing I'd love to make that no one else in the house would eat lol! Maybe I can kinda sorta halve the recipe... It sounds great!
