Wilted Greens Over Pasta

- 16 ounces fresh spinach shopping list
- 16 ounces penne pasta, cooked and kept warm shopping list
- 6 slices bacon, diced shopping list
- 1/2 cup onion, diced shopping list
- 1 clove garlic, minced shopping list
- 1/2 teaspoon crushed red pepper flakes shopping list
- 2 tablespoons white wine vinegar shopping list
- 1 teaspoon granulated sugar shopping list
- 2 teaspoons Dijon mustard shopping list
- 1 cup parmesan cheese, shredded shopping list
How to make it
- Trim spinach and cut into strips.
- In Dutch oven, saute bacon over medium heat until crisp.
- Remove bacon with slotted spoon and set aside.
- Drain off all but 3 tablespoons bacon drippings.
- Add onion to Dutch oven. Saute until softened.
- Add garlic and red pepper flakes. Saute 1 minute.
- Add spinach to Dutch oven and cook until spinach wilts.
- Combine hot pasta, vinegar, sugar and mustard.
- Add pasta to Dutch oven.
- Add cheese. Toss.
- Transfer to serving bowl and sprinkle with bacon.
