How to make it

  • Trim spinach and cut into strips.
  • In Dutch oven, saute bacon over medium heat until crisp.
  • Remove bacon with slotted spoon and set aside.
  • Drain off all but 3 tablespoons bacon drippings.
  • Add onion to Dutch oven. Saute until softened.
  • Add garlic and red pepper flakes. Saute 1 minute.
  • Add spinach to Dutch oven and cook until spinach wilts.
  • Combine hot pasta, vinegar, sugar and mustard.
  • Add pasta to Dutch oven.
  • Add cheese. Toss.
  • Transfer to serving bowl and sprinkle with bacon.

    Yet another thing I'd love to make that no one else in the house would eat lol! Maybe I can kinda sorta halve the recipe... It sounds great!

    You caught my eye with the "greens" in the title. This will be on our dinner table soon. Tonight maybe if I can get my get-up-and-go and make it to the store for supplies.
