Apple and Ginger Crumbly

- 12-15 cooking apples (better if green and sour) shopping list
- 250g sugar shopping list
- 300g ginger cookies shopping list
- 150g butter shopping list
- 1 whole ground nutmeg shopping list
- 1 teaspoon ground cinnamon shopping list
How to make it
- Crush cookies in a mixing bowl
- Melt butter on the hob (make sure not to burn it) and add to the crushed ginger cookies
- Press mixture into the bottom and sides of a 30cm (9in) pie dish and refrigerate
- Peel and core the apples, cut into eighths
- Add a gob of butter to a pan on full heat add the sugar and the apples
- Mix in the cinnamon and shaved nutmeg
- Add 3 tablespoons of water
- Allow the mixture to stew for about 10 minutes
- Pour the mixture into the ginger-lined pie dish and leave to cool
- Serve with a spoonful of yogurt or some vanilla ice cream or some creme fraiche or just by itself... enjoy
