How to make it

  • Crush cookies in a mixing bowl
  • Melt butter on the hob (make sure not to burn it) and add to the crushed ginger cookies
  • Press mixture into the bottom and sides of a 30cm (9in) pie dish and refrigerate
  • Peel and core the apples, cut into eighths
  • Add a gob of butter to a pan on full heat add the sugar and the apples
  • Mix in the cinnamon and shaved nutmeg
  • Add 3 tablespoons of water
  • Allow the mixture to stew for about 10 minutes
  • Pour the mixture into the ginger-lined pie dish and leave to cool
  • Serve with a spoonful of yogurt or some vanilla ice cream or some creme fraiche or just by itself... enjoy
