Ingredients
  • Prep. time includes marinating time.
  • 72 hours 15 minutes (72 hrs prep, 20 min cooking)
  • 8 servings
  • 2 (14 ounce) cans rosebud beets, drained but keeping 2/3 cup
  • liquid reserved
  • 1 cup vinegar
  • 1 cup white sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon whole allspice
  • 4 cloves
  • 1/3 stick cinnamon

Directions
  1. Mix beet liquid, vinegar, sugar, salt and spices in a saucepan
  2. and bring to a boil.
  3. Add beets and return to a boil, then remove from the heat.
  4. Transfer beets to a jar and cover with liquid.
  5. Marinate in refrigerator for 2 to 3 days, then serve.
