How to make it

  • In large bowl, combine bread and tomato cubes. In seperate bowl, mix oil, vinegar, basil, salt and pepper. Add this dressing to bread mixture, and toss lightly. Let stand 15-20 minutes, to allow flavors to intermingle, and toss lightly again. Serve with side dish of freshly grated Parmesan for sprinkling.

    Actually, we usually use a good, crusty real 'Italian' bread that is 2-3 days old. You're right, being a few days old does help the bread to absorb the flavors. If Italian bread isn't available, French bread (especially baguettes) is acceptable substitute, just be sure to let it age for a few days.

    I've wanted to try something like this but keep forgetting - do you use day-old bread so it absorbs more of the juices/flavor?

    Panzanella! It really IS good, and so simple, isn't it? All you have to do is make sure the tomatoes are at peak flavour. I make it all the time!
