I got this recipe from a tv show called "Cookin Cheap" years ago. Its quick and easy to make , I always make double, then we have it for lunch the next day.

  • 1 lb. ground beef
  • 1/2 small onion, chopped
  • 3/4 cup favorite salsa (mild, medium or hot)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Cooked rice
  • Corn chips (not fritos)
  • Shredded cheese
  • Onion, chopped
  • Tomato, chopped
  • Lettuce, shredded
  • Black olives, sliced (optional)
  • Sour cream (optional)
  • Guacamole (optional)
  • Salsa

Directions
  1. In skillet brown beef with onion, drain.
  2. Stir in salsa, garlic, cumin,and chili powder.
  3. simmer for 20 minutes.

  5. Place handful of corn chips on plate,next put some rice on top then some of the meat mixture, then top with cheese, lettuce, onion, tomato, black olives, sour cream, guacamole, salsa
