How to make it

  • In a double boiler, melt the butterscotch chips, coffee and water.
  • In a large bowl, cream the butter and the sugar. Blend in the butterscotch.
  • Sift the flour, soda, salt, baking powder and add to the creamed mixture alternately with the buttermilk. Add eggs one at a time, beating well after each addition.
  • Bake in greased floured tube pan for 60 minutes. Cool in pan for 15 minutes. Then turn out on wire rack to finish cooling. Sprinkle with confectioner's sugar or make the butterscotch glaze.
  • Glaze: In a saucepan, melt 1/4 cup of butter and brown sugar, with 2 tbsp of milk. Bring to boil, add one cup of confectioner's sugar and a tsp of rum extract. Take off heat beat till smooth. Drizzle over cooled cake.
