Chewy Strawberry Walnut Bars Recipe
Easy bar cookie delicious yummy with strawberry preserves. Definite hit with the after school bunch.

Ingredients
  • 2 cups of all purpose flour
  • 1/2 cup of firmly packed brown sugar
  • 1/2 cup of butter, softened
  • 3/4 cup of strawberry preserves (also make these with apricot or orange, equally good)
  • 1 cup of chopped walnuts
  • 1 cup of sweetened coconut
  • 1 cup of firmly packed brown sugar
  • 1 teaspoon of vanilla
  • 2 tablespoons of butter melted
  • 1 egg

Directions
  1. Heat oven to 350 degrees.
  2. Combine flour, brown sugar and soft butter in a mixing bowl and mix until crumbly.
  3. Press into the bottom of a 13x9x2 baking pan, Press up the sides about 1/2 inch. Bake for 10 minutes until lightly browned.
  4. Spread the preserves over the hot crust.
  5. Combine the remaining ingredients and mix well. Sprinkle over the preserves, don't cover the preserves totally. Bake for 35 minutes more until brown and bubbly all over. Cool completely and then cut into bars and serve. If you line the pan with parchment, they will be easier to lift out of the pan. Unless you have a small very sharp spatula they can be hard to get out, but then the one that is messed up never makes it to the serving plate, it belongs to the cook, right?
