Ingredients
  • 2 pounds dried Red Beans
  • 1 pound Salt Pork, cut into 1-inch cubes
  • 1 cup Onion, chopped
  • 1/2 cup Celery, chopped
  • 1/2 cup Carrot, chopped
  • 2 tablespoon White Vinegar
  • 2 Bay Leaves
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Hot Cooked Rice

Directions
  1. Sort and wash beans, place in large Dutch Oven. Cover with water 2 inches above beans, let soak overnight.
  2. Drain beans, cover with more water and bring to a boil. Add next 6 ingredients, stir gently.
  3. Reduce heat, cover and simmer 2 to 2-1/2 hours or until beans are tender and a thick gravy is formed. Add water to prevent beans from sticking, if necessary.
  4. Stir in salt and pepper.
  5. Serve over hot cooked rice with hot sauce.

Alterations


I used bacon slices instead of salt pork for that batch. Was good!


I never knew there was so much diversity to something as basic as red beans and rice. I guess it's not that basic. I like this recipe.
