Blueberry Crumb Bars Recipe

Ingredients
  • 4 c frozen or fresh blueberries
  • 2 c sugar
  • 4 tbsp cornstarch mixed with water to make paste
  • 1/2 tsp nutmeg
  • 1 1/4 c all purpose flour
  • 1/2 c chopped almonds
  • 1/2 c butter, softened
  • 1 egg
  • 3/4 c rolled oats (not instant)

Directions
  1. In a large saucepan combine blueberies and sugar. Cook on medium-low until sugar is dissolved.
  2. Add nutmeg and stir.
  3. Add cornstarch mix and raise the heat to medium-high and bring to boil, stirring constantly until thickened.
  4. Remove from heat and allow to cool slightly.
  5. Meanwhile, in a large bowl combine flour, sugar, almonds, butter, and egg.
  6. Beat at low with an electric mixer until well mixed.
  7. Stir in rolled oats.
  8. Press half of this mixture into greased 9x9 baking pan.
  9. Spread blueberry filling over the crust then crumble the remaining half of the flour mixture over the filling.
  10. Bake at 350 degrees for 45 minutes or until golden brown.
  11. Allow to cool before cutting then refrigerate leftovers. (if there are any!)
