Blueberry Crumb Bars

- 4 c frozen or fresh blueberries shopping list
- 2 c sugar shopping list
- 4 tbsp cornstarch mixed with water to make paste shopping list
- 1/2 tsp nutmeg shopping list
- 1 1/4 c all purpose flour shopping list
- 1/2 c chopped almonds shopping list
- 1/2 c butter, softened shopping list
- 1 egg shopping list
- 3/4 c rolled oats (not instant) shopping list
How to make it
- In a large saucepan combine blueberies and sugar. Cook on medium-low until sugar is dissolved.
- Add nutmeg and stir.
- Add cornstarch mix and raise the heat to medium-high and bring to boil, stirring constantly until thickened.
- Remove from heat and allow to cool slightly.
- Meanwhile, in a large bowl combine flour, sugar, almonds, butter, and egg.
- Beat at low with an electric mixer until well mixed.
- Stir in rolled oats.
- Press half of this mixture into greased 9x9 baking pan.
- Spread blueberry filling over the crust then crumble the remaining half of the flour mixture over the filling.
- Bake at 350 degrees for 45 minutes or until golden brown.
- Allow to cool before cutting then refrigerate leftovers. (if there are any!)
