How to make it

  • Combine fruit, orange rind, ginger and water. Bring to a boil, reduce heat and simmer gently for 10 minutes, stirring constantly.
  • Remove from heat, stir in sugar, mix until it melts. Cool and store in the refrigerator.
  • Good on pound cake, really really good on a toasted piece of pound cake.

    Made this yesterday for my husband to take to an office Thanksgiving party this coming Wednesday. It was very easy to make and is delicious! I doubled the recipe using two bags of fresh cranberries, 2 boxes of dried apricots and 1 box of white raisins. I like things spicy so I upped the ginger by 1/2 tsp. and it still was not too spicy - just a very nice cranberry/apricot flavor and a lovely color. Do make this at least a day ahead to let the flavors meld. Recommend!
