Spiced Cranberry Apricot Relish Recipe
Sweet tart relish that is good served over plain pound cake or vanilla ice cream. Very versatile litlle relish to have on hand. Keeps at least six weeks.

Ingredients
  • 1 lb. can of whole cranberries
  • 2 cups of diced dried apricots
  • 1 cup of white raisins
  • 1 Tablespoon of orange rind
  • 1/2 teaspoon of ground ginger
  • 2 1/2 cups of water
  • 1 cup of sugar

Directions
  1. Combine fruit, orange rind, ginger and water. Bring to a boil, reduce heat and simmer gently for 10 minutes, stirring constantly.
  2. Remove from heat, stir in sugar, mix until it melts. Cool and store in the refrigerator.
  3. Good on pound cake, really really good on a toasted piece of pound cake.
