How to make it

  • Preheat the oven to 375 degrees Fahrenheit. Grease the muffin tins.
  • In a bowl or food processor mash banana and mango together (depending on whether you have a fibrous mango or not).
  • In a small bowl whip together egg, oil, vanilla, and buttermilk.
  • Combine fruit with wet ingredients in the small bowl.
  • In a large bowl combine all the dry ingredients.
  • Pour wet ingredients into the dry and combine gently. Don't overmix.
  • Spoon into greased muffin tins.
  • Bake for 22 to 24 minutes (may need more if the mango was very liquidy)
  • Use a toothpick to check the center.
  • I do freeze these but they only last two weeks tops cuz you can't wait to eat them!!
