Mango Banana Muffins

- 1 cup fresh mango, pureed shopping list
- 1 banana shopping list
- 1 large egg shopping list
- 1/4 cup vegetable oil shopping list
- 3/4 cup buttermilk shopping list
- 1 1/2 teaspoons baking powder shopping list
- pinch of salt shopping list
- 3/4 cup sugar shopping list
- 1/2 teaspoon garam masala shopping list
- 1 1/2 cups flour shopping list
- 1 teaspoon vanilla extract shopping list
- 1/4 - 1/2 cup ground, dessicated coconut shopping list
How to make it
- Preheat the oven to 375 degrees Fahrenheit. Grease the muffin tins.
- In a bowl or food processor mash banana and mango together (depending on whether you have a fibrous mango or not).
- In a small bowl whip together egg, oil, vanilla, and buttermilk.
- Combine fruit with wet ingredients in the small bowl.
- In a large bowl combine all the dry ingredients.
- Pour wet ingredients into the dry and combine gently. Don't overmix.
- Spoon into greased muffin tins.
- Bake for 22 to 24 minutes (may need more if the mango was very liquidy)
- Use a toothpick to check the center.
- I do freeze these but they only last two weeks tops cuz you can't wait to eat them!!
