Traditional Pa. Dutch recipe.From PA Dutch Cookbook handed down by the early settlers in PA of which my husband is of descent.Worth the time to make!!

Ingredients
  • Sponge cake pieces
  • Macaroons
  • 1 tsp cornstarch
  • 1 Tbsp. sugar
  • 2 cups of wine
  • 3 eggs, separated
  • 1/4 cup sugar 1/2 cup slivered, toasted almonds

Directions
  1. Put pieces of sponge cake & a few macaroons into a large baking dish until dish is 1/2 full.
  2. Mix cornstarch and sugar together in top of double boiler and slowly add 1/2 cup of wine, stirring to blend
  3. Heat remaining wine,in separate pot
  4. Add the hot wine gradually to the cornstarch mixture, stirring constantly
  5. Continue to stir, bring to boiling, and cook about 3 min.
  6. Stir a small am't of hot mixture into the egg yolks,beaten
  7. Blend into remaining wine mixture
  8. Cook over simmering water, 3 to 5 min., stirring slowly
  9. Pour over cake & set aside to cool.
  10. When cool, beat the egg whites until frothy.
  11. Add the sugar gradually, beating well after each addition
  12. Cover the pudding with the meringue and sprinkle with nuts
  13. Bake at 325F about 10 min or until meringue is lightly browned
  14. Serve cold. About 8 servings
