How to make it

  • Preheat the broiler
  • Lightly toast the pita bread
  • In a 12 inch skillet, heat olive oil over medium-high heat until hot
  • Add the onions and saute 1-2 minutes or until they begin to brown
  • Add garlic and peppers and continue sauteing 2-3 minutes until peppers begin to soften
  • Remove from heat and stir in vinegar, salt, and pepper
  • Place the Pita pockets top side down on a cookie sheet
  • Divide vegetable mixture among pitas and top with cheddar cheese
  • Broil the pita pizzas 4 inches from heat for 1-2 minutes just until the cheese begins to melt.
