Pita Pepper Pizza

- 1/2 Cup thinly aliced red onion shopping list
- 1 large yellow pepper shopping list
- 1 large red pepper shopping list
- 4 Small whole wheat pita pockets shopping list
- 1 cup grated sharp yellow cheddar shopping list
- 1 tablespoon extra-virgin olive oil shopping list
- 2 teaspoon minced garlic shopping list
- 1 tablespoon balsamic vinegar (or red wine vinegar) shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon ground pepper shopping list
How to make it
- Preheat the broiler
- Lightly toast the pita bread
- In a 12 inch skillet, heat olive oil over medium-high heat until hot
- Add the onions and saute 1-2 minutes or until they begin to brown
- Add garlic and peppers and continue sauteing 2-3 minutes until peppers begin to soften
- Remove from heat and stir in vinegar, salt, and pepper
- Place the Pita pockets top side down on a cookie sheet
- Divide vegetable mixture among pitas and top with cheddar cheese
- Broil the pita pizzas 4 inches from heat for 1-2 minutes just until the cheese begins to melt.
