Pita Pepper Pizza Recipe
I found this a quick and delicious way to use up abundance of peppers

Ingredients
  • 1/2 Cup thinly aliced red onion
  • 1 large yellow pepper
  • 1 large red pepper
  • 4 Small whole wheat pita pockets
  • 1 cup grated sharp yellow cheddar
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoon minced garlic
  • 1 tablespoon balsamic vinegar (or red wine vinegar)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper

Directions
  1. Preheat the broiler
  2. Lightly toast the pita bread
  3. In a 12 inch skillet, heat olive oil over medium-high heat until hot
  4. Add the onions and saute 1-2 minutes or until they begin to brown
  5. Add garlic and peppers and continue sauteing 2-3 minutes until peppers begin to soften
  6. Remove from heat and stir in vinegar, salt, and pepper
  7. Place the Pita pockets top side down on a cookie sheet
  8. Divide vegetable mixture among pitas and top with cheddar cheese
  9. Broil the pita pizzas 4 inches from heat for 1-2 minutes just until the cheese begins to melt.
