Grilled Polenta And Tomatoes Caprese

- 1 tube pre cooked polenta shopping list
- 2-3 medium tomatoes, sliced in 1/4 inch rounds shopping list
- 12 ounces fresh mozzarella (Not processed blocks), sliced into 1/4 inch rounds shopping list
- 1/2 cup basil leaves, torn or in chiffonade shopping list
- 1/2-3/4 cup balsamic vinegar shopping list
- 1 tablespoon plus 1 teaspoon sugar shopping list
- salt to taste shopping list
- fresh ground black pepper for serving shopping list
How to make it
- Slice polenta into 1/4 inch rounds and arrange in grill pan over medium high heat. Grill until golden brown and grill marks well established, about 3 minutes. Flip polenta rounds and warm through.
- While polenta is grilling, add balsamic and sugar to a saucepan and heat until vinegar solution is reduced to a syrup.
- Remove polenta to a sheet pan, let stand until barely hot.
- Arrange polenta, mozzarella, tomatoes in alternating slices on a platter. Garnish with basil, being sure to evenly distribute.
- Season with sea salt and black pepper, drizzle all over with balsamic syrup.

I have included polenta in my recipes and this is a great example of how wonderful it can be. I love the mozzarella and fresh tomatoes with basil a classic to cherish in the summer!
