How to make it

  • Slice polenta into 1/4 inch rounds and arrange in grill pan over medium high heat. Grill until golden brown and grill marks well established, about 3 minutes. Flip polenta rounds and warm through.
  • While polenta is grilling, add balsamic and sugar to a saucepan and heat until vinegar solution is reduced to a syrup.
  • Remove polenta to a sheet pan, let stand until barely hot.
  • Arrange polenta, mozzarella, tomatoes in alternating slices on a platter. Garnish with basil, being sure to evenly distribute.
  • Season with sea salt and black pepper, drizzle all over with balsamic syrup.

    I have included polenta in my recipes and this is a great example of how wonderful it can be. I love the mozzarella and fresh tomatoes with basil a classic to cherish in the summer!
