Ingredients
  • 1 butternut squash( about 1 1/2 lbs.)
  • halved stem to blossom end , seeds removed, peeled
  • 2-3 leeks, trimmed
  • 1 large ( about 3/4 lb) granny Smith apple, peeled, cored, chopped coarse ( 2 cups)
  • 2 Tbsp flour 2 Tbsp unsalted butter
  • 1/2 cup vegetable stock
  • 1 cup shredded extra-sharp cheese
  • 3/4 cup unseasoned bread crumbs
  • 7 strips fully cooked bacon, diced

Directions
  1. Preheat oven to 350 degrees
  2. Using sharp knife, carefully cut squash in 1/4 in. slices
  3. Cut off and discard all but 1 in. from green tops of leeks
  4. Discard tough outer layers
  5. Slice leeks in half; rinse well under cold running water. slice crosswise in 1/4 in. slices
  6. Toss apple with flour.
  7. Melt butter in small saucepanon medium
  8. Add leeks and cook, without browning, about 5 min.
  9. Season to taste with salt & pepper.
  10. Arrange single layer of overlapping squash slices in buttered 9x 9 -inch pan
  11. Top with half the leeks and half the apples; Repeat.
  12. Season with salt & pepper
  13. Pour stock over vegetables in pan
  14. Cover with foil
  15. place pan on baking sheet; place in center of oven
  16. Bake 50 min- 1 hour, or until squash is tender
  17. Combine cheese, bread crumbs, and bacon in medium bowl; sprinkle over vegetables
  18. Return to oven
  19. Bake 10 to 15 min, until lightly browned.
