How to make it

  • First of all in a small sauce pan filled halfway with water put your eggs on to boil med-high to high heat.Set your timer for 15 minutes.While eggs are cooking,thinly slice your onion and dice it,now onto your bell pepper and tomato,You can chop these any size ya like.Put your ingredients in a small-medium bowl adding salt,pepper,mayonnaise,mustard,and relish.
  • Mix until all is mixed well and coated.Set aside.
  • When eggs are done boiling place under cold running water until cooled.On countertop,cutting board or edge of sink (however you crack an egg)tap your egg litely and repeatily while rotating it at the sametime.Do this until the egg shell is seriously cracked up(lol)I find that peeling the egg shell off under running tap water makes it easier.Using an egg slicer,slice your eggs and mix them into the other ingredients.All done :) You can let it chill in the frig for a bit or serve it right away.I usually put my egg salad between two pieces of toast.I use the same ingredients including the eggs but minus the mustard for my Tuna Salad(seriously yummo's)
