Louisiana Fish Fry Coating Mix Recipe
A common light cornmeal coating for frying fish in Louisiana, especially catfish..

Ingredients
  • 1/2 cup yellow cornmeal
  • 1/2 cup corn flour or all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon MSG
  • 1/4 teaspoon fine ground black pepper
  • 1/2 teaspoons paprika
  • 1/4 teaspoon garlic powder

Directions
  1. Use this coating mix for fish when frying.
  2. Mix dry ingredients together and put in a shallow dish.
  3. As each piece of fish is to be fried; rinse in cold water and shake off any excess then roll in the coating mix. Finally slide the fish to the hot oil.
  4. Always bring your oil to the proper temperature prior to adding your pieces and don't overload the pan or fryer. Fry the seafood in batches if necessary.
  5. Pan or deep fry in peanut oil at 350°F, until golden brown.
