New Orleans Seafood Coating Mix Recipe
A New Orleans Coating mix for all kinds of seafood. Used as a batter mix or light coating when frying seafood.

  • 1/2 cup yellow cornmeal
  • 1/2 cup flour, all purpose
  • 1/2 teaspoon salt
  • 1/4 teaspoon fine ground black pepper
  • 1/2 teaspoons paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder

Directions
  1. Use this coating mix for shrimp, fish, scallops, oysters and small seafood cakes which require a coating. The seafood pieces should be patted dry and seasoned prior to coating. The seafood cakes should use only the dry mix and omit dipping into the egg-milk coating.
  2. Mix dry ingredients together and put in a shallow dish.
  3. Beat 1 egg in 1 cup of milk and pour into separate shallow dish.
  4. As each piece of prepared seasoned seafood is to be fried; dredge that piece in coating mix; dip it into egg-milk coating; and dredge it in coating mix second time.
  5. Always bring your oil to the proper temperature prior to adding your pieces and don't overload the pan or fryer. Fry the seafood in batches if necessary.
  6. Pan or deep fry in peanut oil at 375°F, until golden brown.
  7. For a lighter coating omit the egg-milk coating and use only the coating mix.
