How to make it

  • Use this coating mix for shrimp, fish, scallops, oysters and small seafood cakes which require a coating. The seafood pieces should be patted dry and seasoned prior to coating. The seafood cakes should use only the dry mix and omit dipping into the egg-milk coating.
  • Mix dry ingredients together and put in a shallow dish.
  • Beat 1 egg in 1 cup of milk and pour into separate shallow dish.
  • As each piece of prepared seasoned seafood is to be fried; dredge that piece in coating mix; dip it into egg-milk coating; and dredge it in coating mix second time.
  • Always bring your oil to the proper temperature prior to adding your pieces and don't overload the pan or fryer. Fry the seafood in batches if necessary.
  • Pan or deep fry in peanut oil at 375°F, until golden brown.
  • For a lighter coating omit the egg-milk coating and use only the coating mix.
