Holiday Blueberry Maple French Toast Casserole Recipe
Great for a holiday breakfast buffet. Cream cheese dots the blueberries in this maple flavored delicious casserole. Serve with a generous topping of blueberry or maple syrup.

Ingredients
  • 12 slices dry white bread, cut into 1/2-inch cubes (about 8 cups)
  • 2-8 ounce packages cream cheese, cut into 3/4 inch cubes
  • 1 cup fresh or frozen blueberries
  • 12 eggs
  • 2 cups milk
  • 1/2 cup maple syrup

Directions
  1. Place half of the bread cubes over the bottom of a well-buttered 13x9x2-inch baking dish (3 qt. rectangular)
  2. Sprinkle cream cheese and blueberries over bread cubes
  3. Arrange remaining bread cubes over blueberries
  4. In large mixing bowl, beat eggs with a rotary beater (I use whisk)
  5. Beat in milk and the 1/2 cup of syrup
  6. Carefully pour egg mixture over the bread mixture
  7. Cover and chill in the refrigerator for 2 to 24 hours
  8. Bake uncovered for 25 minutes
  9. Uncover and bake for about 25 more minutes, or until a knife inserted near the center, comes out clean
  10. Top should be puffed and golden brown
  11. Let stand for 10 minutes before serving
  12. Serve warm with blueberry or maple syrup
