Shrimp Fra Diavolo With Whole Wheat Linguine Recipe

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 onion chopped
  • 2 cloves of garlic minced
  • 1 1/2 cup canned crushed tomatoes in thick puree (16 oz can)
  • 1/4 teaspoon dried red pepper flakes
  • 1/4 cup water
  • 1/4 cup fresh chopped parsley
  • 3/4 teaspoon salt
  • 1 pound medium shrimp (shelled)
  • 3/4 pound whole wheat linguini (or your choice of pasta)

Directions
  1. In a large frying pan heat oil over moderately low heat
  2. Add onion, stiring occasionally, until translucent, about 5 minutes
  3. Ass the garlic and cook stirring 30 seconds longer.
  4. Stir in tomatos, red pepper flakes, water, parsely, and salt.
  5. Reduce heat and simmer, covered, for 10 minutes
  6. Meanwhile, prepare pasta in boiling water as directed and drain
  7. Add in shrimp to tomato sauce and cook, covered just until shrimp are pink, about 4 minutes
  8. Toss drained pasta with sauce and shrimp and serve
