Mediterranean Marinade For Meat And Fish Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kilgore Estate in Sachse, Texas in 1988.

Ingredients
  • 10 cloves garlic smashed and peeled
  • 3 bay leaves broken
  • 6 sprigs rosemary bruised with back of a knife
  • 6 sprigs thyme
  • 4 cups red wine
  • 1/2 cup soy sauce
  • 1/2 cup teriyaki sauce
  • 1/2 cup cider vinegar
  • 3 lemons chopped
  • 1 large white onion chopped
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon dried oregano

Directions
  1. Combine all ingredients then cover and let set at room temperature several hours before using.
  2. To marinate meat put marinade and meat in a plastic bag.
  3. Refrigerate and turn every few hours.
  4. Roast or grill marinated meat or fish.
