Celebration Chocolate Raspberry Cake

- Cake: shopping list
- 2 cups sugar shopping list
- 1 3/4 cups all-purpose flour shopping list
- 3/4 cup cocoa shopping list
- 1 1/2 t baking powder shopping list
- 1 1/2 t baking soda shopping list
- 1 t salt shopping list
- 2 eggs shopping list
- 1 cup milk shopping list
- 1/2 cup vegetable oil shopping list
- 2 t vanilla shopping list
- 1 cup boiling water shopping list
- frosting & Filling: shopping list
- 8 T butter, melted shopping list
- 2/3 cup cocoa shopping list
- 3 cups confectioner's sugar shopping list
- 1/3 cup milk shopping list
- 1 t vanilla shopping list
- 1 jar raspberry All-fruit spread shopping list
- Optional: shopping list
- fresh raspberries shopping list
- candies shopping list
- sprinkles shopping list
How to make it
- Heat oven to 350.
- Grease and flour 2 9-inch round cake pans.
- In large bowl, combine sugar, flour, cocoa, baking powder, baking soda and salt.
- Add eggs, milk, oil and vanilla.
- Beat on medium for 2 minutes.
- Stir in boiling water. (Batter will be thin.)
- Pour into prepared pans.
- Bake until wooden toothpick inserted in middle comes out clean, 30 to 35 minutes.
- Cool for 10 minutes before turning onto wire racks.
- To prepare frosting:
- In a large mixing bowl, combine butter and cocoa.
- Alternately add the confectioner's sugar and milk. Add small amount of additional milk if necessary to adjust consistency.
- Stir in vanilla.
- Prepare bottom layer of cake. Spread raspberry jam evenly on top.
- Spread layer of frosting on top of jam and place second layer.
- Frost.
- Garnish with fresh raspberries, sprinkles, or red or pink round candies (like Strawberry Whoppers.)
