Beets with Mushrooms

My neighbour, one of the best cooks I know, gave me this recipe. We love it!
Ingredients
- 1 medium onion, finely chopped shopping list
- 1/2 cup cooking oil shopping list
- 4 cups cooked beets, cut into thin strips shopping list
- 1 cup sliced cooked mushrooms shopping list
- 3 cloves crushed garlic shopping list
- 1 tbsp sugar shopping list
- 2 tbsp vinegar shopping list
- 1/4 tsp salt shopping list
- 1/4 tsp pepper shopping list
How to make it
- Saute onion in cooking oil until golden, but not brown. Add remaining ingredients and stir gently. Chill overnight in the refrigerator.
- We use fresh beets, so the cooking time would be increased.

How do you cook beets? I have no idea! All I know is that I'm needing some beet recipes. My husband decided to plant 2 whole rows of them in our garden. So you can imagine!
