Asparagus Broth Recipe
A basic, creamy, smooth broth of asparagus and chicken stock.

Ingredients
  • 6 cups stock, chicken
  • 1-1/2 cups asparagus; trimmed
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 4 parsley branches
  • 1 cup leek greens; chopped
  • 1 carrot; peeled, chopped
  • 1 celery stalk; chopped

Directions
  1. Use lower ends and trimmings of 1 lb of fresh asparagus. Roughly chop them into 1" pieces.
  2. Combine the rest of the broth ingredients in a pot, bring to a boil, simmer 20-25 minutes, and then strain.
  3. Refrigerate until needed.
