Schnitzel Recipe
This dish was served by my oma and mom with mashed potatoes, green beens or red cabbage. It's quick and very tasty.

Ingredients
  • 8 slices boneless pork, 1/4 inch thick
  • 1 c flour
  • 2 eggs, lightly beaten with 1 tbsp water
  • 2 c dry breadcrumbs
  • 1/4 tsp pepper , salt & garlic powder
  • 1/2 c butter & 2 tbsp oil
  • Lemon slices

Directions
  1. With mallet, pound each slice of pork lightly to flatten. Dredge thoroughly with flour. Dip floured slices in egg mixture, then coat with crumbs seasoned with pepper., salt & garlic powder.
  2. Place pork on wire rack and refrigerate for about 1 hour. This prevents coating from falling off during cooking.
  3. In large skillet, heat together butter and oil. Saute pork slices quickly, turning once or twice, until golden brown on both sides.
  4. Serve with lemon slices.
