Schnitzel

- 8 slices boneless pork, 1/4 inch thick shopping list
- 1 c flour shopping list
- 2 eggs, lightly beaten with 1 tbsp water shopping list
- 2 c dry breadcrumbs shopping list
- 1/4 tsp pepper , salt & garlic powder shopping list
- 1/2 c butter & 2 tbsp oil shopping list
- lemon slices shopping list
How to make it
- With mallet, pound each slice of pork lightly to flatten. Dredge thoroughly with flour. Dip floured slices in egg mixture, then coat with crumbs seasoned with pepper., salt & garlic powder.
- Place pork on wire rack and refrigerate for about 1 hour. This prevents coating from falling off during cooking.
- In large skillet, heat together butter and oil. Saute pork slices quickly, turning once or twice, until golden brown on both sides.
- Serve with lemon slices.
