How to make it

  • With mallet, pound each slice of pork lightly to flatten. Dredge thoroughly with flour. Dip floured slices in egg mixture, then coat with crumbs seasoned with pepper., salt & garlic powder.
  • Place pork on wire rack and refrigerate for about 1 hour. This prevents coating from falling off during cooking.
  • In large skillet, heat together butter and oil. Saute pork slices quickly, turning once or twice, until golden brown on both sides.
  • Serve with lemon slices.
