Oven Baked Omelet With Sausage and Peppers

- 10 ounces hot italian sausage shopping list
- 1/2 head garlic unpeeled plus 4 garlic cloves shopping list
- 1-1/2 cups red wine shopping list
- 2 tablespoons olive oil shopping list
- 1 leek white portion only julienned shopping list
- 1/2 red bell pepper seeded and cut lengthwise into strips shopping list
- 1/2 yellow bell pepper seeded and cut lengthwise into strips shopping list
- 1/2 green bell pepper seeded and cut lengthwise into strips shopping list
- 1 teaspoon minced fresh oregano shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 6 tablespoons unsalted butter shopping list
- 9 large eggs separated shopping list
- 1/4 teaspoon alt shopping list
- 1/4 cup all purpose flour shopping list
- 1/2 cup heavy cream shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/2 cup grated parmigiano Reggiano cheese shopping list
How to make it
- In large saucepan combine sausage and garlic with cold water to cover by 1".
- Cover then bring to a boil over high heat.
- Reduce heat to low and simmer 25 minutes.
- Drain sausage and cut into slices and return to clean saucepan.
- Add 4 garlic cloves and red wine.
- Bring to boil over high heat then reduce heat and cover partially and cook 45 minutes.
- Remove from heat.
- In large sauté pan over medium high heat warm the olive oil.
- Add leek and sauté until beginning to soften about 5 minutes.
- Stir in bell peppers and continue to sauté 10 minutes longer.
- Add oregano and season with salt and pepper then add sausage then stir to mix well.
- Preheat oven to 400.
- Place butter in baking dish then put dish in oven for 5 minutes.
- In bowl using electric mixer beat together the egg whites and salt until stiff peaks form.
- In another bowl beat egg yolks until thick.
- Add flour, cream, cayenne and black pepper to yolks and mix.
- Gently fold in whites.
- Remove dish from oven.
- Pour half the egg mixture into the hot dish.
- Scatter with sausage and remaining egg mixture.
- Sprinkle with cheese then return to oven and bake 5 minutes.
- Reduce heat to 350 and bake 15 minutes longer then cut omelet into wedges and serve.
