Mels California Salad Ambrosia

- 1 bag of sweetened coconut shopping list
- 2 large cans of fruit cocktail shopping list
- 2 cans of mandarin oranges shopping list
- 2 cans (or 1 large can) of crushed pineapple shopping list
- 1 package of miniature marshmallows shopping list
- 2 12 oz. containers of whipped topping shopping list
How to make it
- Drain all fruit very well, manually squeezing the pineapple to get as much juice out as possible. Put all fruit in a very large bowl. Mix in coconut to taste. Add marshmallows to taste.
- Stir in one of the containers of whipped topping and refrigerate overnight.
- Check the composition of the mixture before serving. If it is too runny, add more whipped topping before serving.
- Serves: a lot (at least 12)
- Mel's notes: I always add extra topping before serving. I also like to add a jar of drained maraschino cherries.
- I have also added a touch of rum on occasion. But it does tend to make the salad too "wet" in my opinion.
- The "360" minutes "cooktime" refers to chilling overnight.
