Baked Ice Planet for River

- 1/2 quart vanilla ice cream, slightly softened shopping list
- 2 1/2 cups cornflake cereal, crushed roughly shopping list
- 1 tablespoon salted butter, melted shopping list
- 2 tablespoons sugar shopping list
- 1 teaspoon cinnamon shopping list
- fruit topping of your choice - River likes Hodgeberry/huckleberry/blueberry, but Kaylee prefers strawberry! shopping list
- freshly whipped whipping cream sweetened to taste with sugar and pure vanilla extract shopping list
- honey (optional) shopping list
How to make it
- Preheat oven to 350 degrees F.
- Divide the ice cream into 8 portions and make 8 vanilla ice cream balls. Place on a wax paper lined cookie sheet and freeze for about an hour.
- Combine the remaining ingredients to make the coating and spread on a cookie sheet. Bake 350* until crisp and golden. (Your cooking time may vary according to preference and oven temperature.) Let cool.
- Roll the frozen ice cream balls in the cooled coating mixture, then replace in freezer for 2 hours more.
- Place each Ice Planet in a sherbet dish, top with fruit topping and whipped cream, and drizzle with honey (optional).
- Enjoy!
- Note: you can vary your Ice Planets by adding things such as toffee bits, mini chocolate chips, Oreo bits, vanilla bean innards, etc.
- Makes 8 Ice Planets.
