Ingredients
  • 1/2 quart vanilla ice cream, slightly softened
  • 2 1/2 cups cornflake cereal, crushed roughly
  • 1 tablespoon salted butter, melted
  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • fruit topping of your choice - River likes Hodgeberry/huckleberry/blueberry, but Kaylee prefers strawberry!
  • freshly whipped whipping cream sweetened to taste with sugar and pure vanilla extract
  • honey (optional)

Directions
  1. Preheat oven to 350 degrees F.
  2. Divide the ice cream into 8 portions and make 8 vanilla ice cream balls. Place on a wax paper lined cookie sheet and freeze for about an hour.
  3. Combine the remaining ingredients to make the coating and spread on a cookie sheet. Bake 350* until crisp and golden. (Your cooking time may vary according to preference and oven temperature.) Let cool.
  4. Roll the frozen ice cream balls in the cooled coating mixture, then replace in freezer for 2 hours more.
  5. Place each Ice Planet in a sherbet dish, top with fruit topping and whipped cream, and drizzle with honey (optional).
  6. Enjoy!
  7. Note: you can vary your Ice Planets by adding things such as toffee bits, mini chocolate chips, Oreo bits, vanilla bean innards, etc.
  8. Makes 8 Ice Planets.
