Pesto Summer Basil In Winter

- fresh basil shopping list
- Parm cheese, fresh grated, if possible shopping list
- roasted garlic, buy it minced, and roasted, if possible. If not roast it. shopping list
- pine nuts, get it in bulk section, pan roast 1 min.( Cheap) shopping list
- Grated/ peeled lemon rind shopping list
- Whole/ Chunk/Kosher/sea salt shopping list
- pepper shopping list
- EVOO shopping list
How to make it
- Put basil, and Coarse salt/pepper into processor. Process.
- Add toasted nuts, cheese, garlic, lemon rind. Process
- Add desired amt. of EVOO to your liking for serving now, (more) or freezing for later (less). Process.
- You can always add more oil/butter later for desired consistency.
- Varies to your serving needs/ processor size.
- Amounts I use: Basil,1 C packed , 1T Coarse /Whole Salt, a couple pepper grinds, 1/2 tsp. minced roasted garlic, 6-8 passes w/ the grater on the lemon rind, 1/4 C pine nuts, 1/4+ C cheese,1/3-1/2 EVOO. My amounts are based on the size of my processor. Also, the amount of oil is for freezing now purposes. Add more for serving now, or add butter and oil for serving. Same goes for when you thaw and serve later.
- Feel free to experiment. I did.
- Get ice cube trays @ dollar store to freeze in. Then put in freezer bags. You won't mess up your regular ice cube trays, and you can use them next year.
