It Aint Easy Being Green Curry Recipe

Ingredients
  • 3 TBS peanut oil
  • 1 sweet potato (the organge kind), diced
  • 1/4 cup Thai green curry paste
  • 1 cup chicken or veggie broth
  • 1 cup coconut milk
  • 2 carrots, thinly sliced
  • 500 g (18 oz) green beans, cut into bite-sized pieces
  • 1 small bunch basil

Directions
  1. Pan fry sweet potato in peanut oil until light brown.
  2. Add green curry paste, fry until fragrant.
  3. Add broth, coconut milk, and carrot.
  4. Bring to a simmer and let cook for about 15 minutes.
  5. Add beans and basil and cook for another few minutes.
  6. Serve over saffron or plain basmati rice.
