It Aint Easy Being Green Curry

- 3 TBS peanut oil shopping list
- 1 sweet potato (the organge kind), diced shopping list
- 1/4 cup Thai green curry paste shopping list
- 1 cup chicken or veggie broth shopping list
- 1 cup coconut milk shopping list
- 2 carrots, thinly sliced shopping list
- 500 g (18 oz) green beans, cut into bite-sized pieces shopping list
- 1 small bunch basil shopping list
How to make it
- Pan fry sweet potato in peanut oil until light brown.
- Add green curry paste, fry until fragrant.
- Add broth, coconut milk, and carrot.
- Bring to a simmer and let cook for about 15 minutes.
- Add beans and basil and cook for another few minutes.
- Serve over saffron or plain basmati rice.
