How to make it

  • In a large bowl combine all dry ingredients. Blend in the soymilk. Thinly slice the bananas and fold them in.
  • Pour 1/4 cup batter into hot nonstick griddle or pan. Spread batter with spatula to an even thickness. A teaspoon or two of oil can be added beforehand to help prevent sticking and create crispiness around the edges.
  • Cook for 2 minutes, until bubbles appear. Flip and cook for another minute. Careful while flipping, these pancakes are more fragile than your average mix from a box.
  • Serve plain or with your choice of topping. Suggestions: fruit spread, applesauce, margarine, brown sugar, sliced bananas, soy whipped cream and/or pecans.
  • Makes about 12 pancakes.
