Banana Oat Pancakes

- 1/2 cup rolled oats shopping list
- 1/2 cup unbleached flour shopping list
- 1/4 cup soy flour shopping list
- 1 tablespoon baking powder shopping list
- 1 tablespoon sugar (optional, to taste) shopping list
- 1 1/2 cups soy milk, plain shopping list
- 2 bananas shopping list
How to make it
- In a large bowl combine all dry ingredients. Blend in the soymilk. Thinly slice the bananas and fold them in.
- Pour 1/4 cup batter into hot nonstick griddle or pan. Spread batter with spatula to an even thickness. A teaspoon or two of oil can be added beforehand to help prevent sticking and create crispiness around the edges.
- Cook for 2 minutes, until bubbles appear. Flip and cook for another minute. Careful while flipping, these pancakes are more fragile than your average mix from a box.
- Serve plain or with your choice of topping. Suggestions: fruit spread, applesauce, margarine, brown sugar, sliced bananas, soy whipped cream and/or pecans.
- Makes about 12 pancakes.
