How to make it

  • Pour the soaked beans in a saucepan and cook, covered, until tender, adding water if necessary. (Soaking them overnight the day before making works well.)
  • Heat 3 Tbsp oil in a skillet, add the peppers and onions, and cook until the onions are translucent. Add the garlic and parsley, stir, and set aside.
  • Heat remaining oil and butter in a large pot (large enough for all ingredients).
  • Add the beef and cook about 25 minutes, stirring to break up the largest lumps (pieces about the size between a dime and nickel are good, though).
  • About halfway through cooking the beef, add the chili powder and cumin and cook, stirring to coat the meat with the spices.
  • After meat has cooked for 25 minutes, add the cooked peppers and onions to the meat. Stir.
  • Add the tomatoes, salt, and pepper.
  • Simmer for 60 minutes, stirring often.
  • Add the beans and water and continue cooking for an additional 30 minutes.
  • Skim off fat.
  • Serve with sour cream, chopped onions, shredded cheddar cheese, and crackers.
