How to make it

  • Preheat oven to 400.
  • Sprinkle chicken with salt and pepper then place in rectangular baking pan and set aside.
  • In medium skillet melt butter over medium heat.
  • Add chopped onion and cook stirring occasionally for 5 minutes.
  • Add paprika and all but 1 tablespoon of the green onions.
  • Continue to cook stirring occasionally for 4 minutes.
  • Spread onion mixture evenly over chicken then spoon orange juice and bourbon over top.
  • Bake for 30 minutes turning and basting occasionally.
  • Remove chicken from oven and spoon peaches over top and sprinkle with nutmeg.
  • Return to oven for 20 minutes longer.
  • Remove chicken from pan and place on serving dish then pour juices over top.
  • Garnish with the remaining green onions and serve immediately.
