Bourbon Laced Tipsy Chicken With Peaches Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boswell Estate in Arlington, Texas in 1984.

Ingredients
  • 4 chicken breast halves
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons butter
  • 1 large onion finely chopped
  • 1 teaspoon paprika
  • 6 green onions chopped including green part
  • 1/2 cup orange juice
  • 2 tablespoons bourbon
  • 1 cup chopped fresh peaches
  • 1/4 teaspoon nutmeg

Directions
  1. Preheat oven to 400.
  2. Sprinkle chicken with salt and pepper then place in rectangular baking pan and set aside.
  3. In medium skillet melt butter over medium heat.
  4. Add chopped onion and cook stirring occasionally for 5 minutes.
  5. Add paprika and all but 1 tablespoon of the green onions.
  6. Continue to cook stirring occasionally for 4 minutes.
  7. Spread onion mixture evenly over chicken then spoon orange juice and bourbon over top.
  8. Bake for 30 minutes turning and basting occasionally.
  9. Remove chicken from oven and spoon peaches over top and sprinkle with nutmeg.
  10. Return to oven for 20 minutes longer.
  11. Remove chicken from pan and place on serving dish then pour juices over top.
  12. Garnish with the remaining green onions and serve immediately.
