Yum Rum Cake Recipe
This is a must have during Christmas. This cake can be baked ahead of time and frozen. It seems to get more moist everyday. The Rum gives it a very different flavor from other pound cakes.

Ingredients
  • 1 cup chopped pecans
  • 1Pkg Yellow Cake Mix
  • 1 Pkg. Instant Vanilla Pudding
  • 4 Eggs
  • 1/2 cup cold water
  • 1/2 cup vegetable oil
  • 1/2 cup Bacardi Dark Rum
  • Glaze:
  • 1/4 cup Butter
  • 1/4 cup water
  • 1 cup sugar
  • 1/2 cup Bacardi Dark Rum

Directions
  1. Preheat oven to 350.
  2. Grease and flour a 10" tube pan.
  3. Sprinkle pecans over bottom of pan.
  4. Mix all ingredients together.
  5. Pour batter over pecans in pan.
  6. Bake 1 hour.
  7. Set on rack to cool.
  8. Place on serving plate and prick holes in top of cake.
  9. Glaze:
  10. Melt Butter in sauce pan.
  11. Stir in water and sugar and boil for 5 minutes. When boiling add Rum.
  12. Drizzle over Cake
