How to make it
- In a sauce pan, add sherry and heat over high heat.
- Add shallots or scallions and cook until soft.
- Stir in Dijon mustard and whipping cream.
- Bring to a boil, stirring constantly, and cook until sauce thickens and shiny bubbles form, about 3-4 minutes.
- Serve over protein of choice.
