Mac N Cheese With A Horn And Hardart Twist

- 1 lb elbow macaroni, Rotini, or other medium pasta shape shopping list
- 2 Tbs butter shopping list
- 6 Tbs all-purpose flour shopping list
- 1 1/2 cups milk shopping list
- 1/2 cup heavy cream shopping list
- 1 1/2 cups grated cheddar cheese shopping list
- 1/4 tsp cayenne pepper shopping list
- 1 tsp salt shopping list
- 1/3 cup grated parmesan cheese shopping list
- 1 can diced tomatoes shopping list
How to make it
- 1 Prepare pasta according to package directions; drain and rinse
- under cold water and set aside. Preheat oven to 375°.
- 2 In a medium saucepan, melt margarine over low heat. Stir in
- flour with a whisk and cook, stirring, for 1 minute. Gradually whisk in the
- milk and bring the sauce to a boil, stirring constantly. Remove from heat
- and add Cheddar cheese, cayenne pepper and salt. Stir until the cheese has
- melted.
- 3 In a large mixing bowl, stir the cheese sauce, tomatoes and pasta
- together. Spoon into a 1 1/2-quart oven proof casserole dish. Sprinkle
- Parmesan cheese over the top. Bake until browned on top and hot all the way through, about 30-35 minutes.

- Mel's notes: This is a combination of two recipes. The Horn & Hardart recipes uses the tomatoes. It was delicious with the tomatoes and the freshly grated parmesan on top.
