Lemon Fantasy Fudge Recipe

For the family and friends that can't eat chocolate, this lemony fudge is divine. Servings are tough to determine. Your milage may vary. ;-)

Ingredients
- 3 cups granulated sugar
- 3/4 cup unsalted real butter
- 2/3 cup evaporated milk
- 12 oz. lemon chips (from King Arthur Four site)
- 7 oz. jar marshmallow cream
- 2 tsp. lemon extract
- several drops of yellow food coloring
Directions
- Microwave method:
- Microwave butter in 4-quart microwave-safe bowl on HIGH (100%) 1
- minute or until melted. Add sugar and milk; mix well. Microwave on HIGH
- 5 minutes or until mixture begins to boil, stirring after 3 minutes. Mix well; scrape bowl. Continue microwaving on HIGH 5 1/2 minutes; stir after 3 minutes. Stir in chips until melted. Add marshmallow cream and food coloring and mix. Add lemon extract and mix well. Pour into greased 9-inch square pan or 13x9-inch baking pan.
- Cool at room temperature; cut into squares. Makes 3 pounds.

Along with cherry chips, cappuccino chips, and orange dreamsickle wafers. Yum!!! All different kinds of fudge!
