Beet Jelly Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bateman Estate in Wills Point, Texas in 1985.

Ingredients
  • 12 medium beets peeled and cut into small pieces
  • 1/2 cup lemon juice
  • 1 package sure jell
  • 6 cups sugar

Directions
  1. Wash beets then peel and cut into small pieces.
  2. Grind and cover with water.
  3. Cook until tender then strain through a jelly cloth.
  4. Add lemon juice and sure jell then stir until dissolved.
  5. Put over high heat and stir until mixture boils hard.
  6. At once stir in 6 cups sugar and bring to a full rolling boil then boil hard for 1 minute.
  7. Remove from heat then skim off foam and pour into glass jars.
  8. Process in water bath for 20 minutes.
