How to make it

  • This is the same as a regular taco, just substitute the tortilla with a baked potato.
  • Bake as many potatoes as needed in the microwave (time varies with ovens)
  • While hot, slice open the top and stuff in whatever fillings you want.
  • Pop it in the micro for a few more seconds until the cheese is melted.
  • All done.

Heck, I've long put mayo on my french fries. Ain't nothing wrong with a different flavor combination.

Great idea! Will be trying this one! And I am with you organicmama - mayo is good on ANYTHING! I put it on hot dogs, and, many of us here in east TN put it in our pinto beans! (Kraft real mayo - not the sweet or lemony stuff!).

This is a great idea, I really don't care for those little taco shells.
For some reason, people think I am weird, I put mayo on my tacos, what's wrong with that?

Great party food for a bunch of teenagers. Next impromptu party, this is the menu for those chowhounds. Thanks for the great post.

Sounds quick and easy. I know my son and nephews will like this when I cook dinner for them.
