Ingredients

8 medium potatoes

4 eggs

1/4 cup milk

2 tbs. mustard

1/4 to 1/2 cup chopped onion

3/4 to 1 cup chopped celery

2 cups salad dressing (Miracle Whip)

1 tbs. sugar

1 to 2 grated carrots

1 tbs. vinegar

1 tbs. parsley

salt to taste

Directions

Cook eggs and potatoes

While they cool mix together remaining ingredients

Add potatoes and eggs while still warm

Refrigerate immediately

I made June's potato salad last night to take to Easter dinner and made a major mistake. The recipe calls for SALAD DRESSING (Miracle Whip), not mayo. It's still good, but it's not June's.
When I follow this recipe, it sometimes turns out a little runny. I usually cook and extra potato, but adding less milk would probably work, too.
I also made June's mint brownies for dessert. I added chocolate bunnies and jelly beans. An homage to June.
