How to make it

  • Pour boiling water over rolled oats in a large bowl.
  • Add salt and honey and cool to lukewarm.
  • Dissolve yeast with the sugar in the warm water.
  • When yeast mixture is bubbling add to the cooled oatmeal mixture then beat in the wheat germ.
  • Add half the flour.
  • When mixture is shiny work in as much more flour as you need to make dough you can handle.
  • Knead until dough is smooth and springy.
  • Allow to rise until doubled in bulk then knead down and shape into loaves.
  • Allow to rise in greased loaf pans until double again.
  • Bake at 375 for 50 minutes.
