Ingredients
  • 2 cups boiling water
  • 1-1/2 cup rolled oats
  • 2 teaspoons salt
  • 1/4 cup honey
  • 1 package active dry yeast
  • 1/4 cup warm water (90-105°)
  • 1 teaspoon sugar
  • 1/4 cup wheat germ
  • 5 cup unbleached white flour

Directions
  1. Pour boiling water over rolled oats in a large bowl.
  2. Add salt and honey and cool to lukewarm.
  3. Dissolve yeast with the sugar in the warm water.
  4. When yeast mixture is bubbling add to the cooled oatmeal mixture then beat in the wheat germ.
  5. Add half the flour.
  6. When mixture is shiny work in as much more flour as you need to make dough you can handle.
  7. Knead until dough is smooth and springy.
  8. Allow to rise until doubled in bulk then knead down and shape into loaves.
  9. Allow to rise in greased loaf pans until double again.
  10. Bake at 375 for 50 minutes.
