Years ago, served to me at a bed and breakfast in Colorado. It was served slightly warm,so delicious, so moist. I asked them for the recipe. They mailed it to me!

Ingredients
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • (1) 8 oz carton sour cream
  • 1 tsp almond extract
  • (1) 16 oz can whole-berry cranberry sauce
  • 1/2 cup chopped pecans
  • GLAZE
  • 3/4 cup powdered sugar
  • 1/2 tsp almond extract
  • 1 Tbsp warm water
  • .

Directions
  1. Preheat oven to 350 degrees
  2. Cream butter; gradually add sugar, beating until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition
  4. In bowl, combine flour, baking powder, baking soda and salt
  5. Add to creamed mixture alternately with sour cream, beating well after each addition.
  6. Stir in almond extract.
  7. Spread half of the mixture in greased, floured bundt pan
  8. Spoon half of the cranberry sauce on batter
  9. Spread evenly, add remainder of creamed mixture over cranberry sauce
  10. Sprinkle with pecans
  11. Bake at 350 degrees for 40-45 minutes or until done
  12. Cool slightly and drizzle with glaze
  13. GLAZE
  14. Mix powdered sugar, almond extract, and water until smooth
  15. I HAVE SERVED THIS AT BREAKFAST, BRUNCH, AND AS A DESSERT
